FOOD & CUISINE IN MANADO REVIEW

Manado’s local food, also known as Minahasan food. Manadonese food is very famous throughout Indonesia for two things. First, the flavor of choice is very, very hot and spicy. People in Manado will likely not go for a strike when fuel costs increase, but it is very unlikely for them to stay quiet when chili prices increase. They eat almost anything with chilies, even for fried sweet banana. Second, Minahasan people eat absolutely anything with legs, except tables and chairs for sure. Exotic meat choices include dogs, fruit bats, forest rats, cats, snakes. So, be prepared with what you’ll see in a Minahasan restaurant, or for more bizarre sights, in a butcher section at a Minahasan market.

» SEAFOOD

Fresh seafood is the famous in manado because the location of Manado which is close to the sea. Grilled Gala Shrimp and Grilled Spicy Grouper. That's the favorite one in manado. Both were served fresh and very flavorful. The fish was covered with chili paste. In addition to the two main dishes, Sambal Dabu-Dabu, which is a mixture of shallots, tomatoes, limes and various kinds of chilies, was also given as a dipping hot sauce. It was ultra hot.

» COCONUT CRAB

Cooked in black pepper sauce. Coconut crab is the largest land-living arthropod in the world, considered a delicacy and an aphrodisiac, with a taste very similar to lobster and crab meat. That's available in Padang Spicy Sauce, Oyster Sauce, or with Coconut Milk Sauce.

» IKAN WOKU BELANGA

Garoupa fish (grouper) cooked in Woku Belanga style, which refers to being cooked inside a pot enriched with various spices such as lemon basil, turmeric leaf, lemon grass, tomato, chili pepper, and lemon. The fish was tasty but blazingly spicy.

» CAKALANG PAMPIS

Cakalang Pampis or Tuna Floss ala Manado can accompany with warm cooked rice or as a filling for panada. Panada is very closed to Spanish or Portuguese empanada or Jamaican patty. While in the west part of Indonesia, pastel is more popular. Pastel has a flakier skin like Malaysian curry puff and Makassar (South Sulawesi) jalakote.

» KUAH ASAM

Kuah asam is also typical food of North Sulawesi. It feels fresh and nutritious course. Kuah asam broth in a can of fish boil, can use any fish, carp, tilapia, tuna, fish tude, roa raw fish, etc. But the most delicious used the fresh red snapper. And for the acid, derived from tomatoes and lemon juice.

The content of this sour sauce also varies, sometimes adding pipil pumpkin and sweet corn, potatoes, carrots or vegetable gedi. Can also add lemon juice or bouillon powder. When making gravy with sour pork, must wear lime and add the ginger.

» IKAN TUDE WOKU DAUN

The important thing to make this menu which is to use a lot of spices. This recipe using fresh fish tude. Wrapped with banana leaves.

» RICA IKAN ROA (Sambel Roa)

Roa fish mix with tomato, chilli, onion and usually a companion Tinutuan and fried plantains.

» TINUTUAN (Manadonese porridge/Bubur Manado) :
Ingredients : Rice, Spinach, Cassava, Pumpkin, Kangkung (water spinach), Gedi (Hibiscus Manihot L), Corn. For toping, usualy used basil, and fried union. Manadonese usually took, Nike savory chips (the juvenile from Awaous melanocephalus fish/baby Goby) or fried Cakalang (Skipjack Tuna) as the side dish.

» NASI KUNING (Yellow Rice)
One of the favorite meal in Manado, and it usually for breakfast.

Nasi Kuning made from, rice cooked with coconut milk and turmeric to make it yellow and tasty. Nasi Kuning mixed with shredded cakalang fish, shredded beef, and some fried union or Potato as a topping. Usually, Manadonese eat it with boiled egg or fried tofu. If you want to have your meal somewhere, Nasi Kuning would be pack into some kind of palm leaf.

» KLAPPERTART
Klappertart is one of the favorite dessert from manado. Ingredients : Condensed milk, Sweet Young, Coconuts, Rhum, Vanilla Extract, Corn starch/Maizena, Cinnamon, Walnuts, Raisins or Cheese or Chocolate.

» ES KACANG MERAH
It was a mix of fruits and red beans on ice. The iced red beans are an all time favorite dish of that restaurant. It was good and absolutely a perfect dessert for red bean lovers.

It is not just fried banana, but very interesting Manadonese people eating fried bananas with chili paste.

One of the Manadonese favorite snack. Fried bread filled with spicy Skipjack tuna(Cakalang).

Lalampa is a type of traditional Manado cake. From its shape, lalampa looks similar to lemper. Lalampa made from rice containing shredded skipjack tuna. Another ingredient is Pulo rice or glutinous rice which makes the lalampa texture soft and fluffier.

» CAP TIKUS
Local name of minahasa drinks (alcohol) processed from palm tree sap, to be one alcoholic drink in the ground Toar Lumimuut. In making of Cap Tikus, it needs special expertise. Where farmers start of refining sap (saguer in Minahasa), and processed in such a way as to be one of alcohol consumed by the Minahasa and Sulawesi in general.
